Creamed Chipped Beef
2 ribs celery, minced
1 onion, minced
1/2 stick (1/4 c.) butter
3 tbsp. flour
2 c. milk, scalded
5 oz. chipped beef, shredded
1 c. fresh or thawed frozen peas
Salt and pepper
In saucepan, cook celery and onion in butter over moderate heat,
stirring for 3 minutes or until softened. Add flour and cook over
moderately low heat, stirring for 3 minutes. Remove pan from heat,
add milk whisking constantly. Cook mixture, stirring for 2 minutes.
Add chipped beef and peas, cook over moderately low heat, stirring
for 3 minutes. Add salt and pepper to taste. Serve over rice or
toast. Serves 3 to 4.
