Corn Relish
1-1/2 c. sugar
1-1/2 c. vinegar (5% acidity)
10 1/2 c. fresh or frozen whole kernel corn
1 pkg. corn relish mix
2 c. diced onion
Prepare home canning jars and lids. Combine sugar, onion, water,
vinegar and relish mix. Bring to a boil. Add corn, simmer 5 minutes.
Pack relish into hot jars, leaving 1/4 inch space. Wipe jar rim
clean, place lids on and screw band down. Process 15 minutes in
boiling water bath canner. Makes approximately 7 pints.
