Orange Nut Bread
3 c. sifted flour
3 tsp. baking powder
1 tbsp. grated orange rind
1/2 to 3/4 c. sugar
1 egg
1/4 c. orange juice
1 1/4 c. milk
2 tbsp. melted shortening
1 c. chopped walnuts
Preheat oven to 350 degrees. Sift together first 2 ingredients.
Combine orange rind and sugar and add to flour mixture. Set aside.
Combine egg, orange juice, milk and shortening, beating until
thoroughly blended. Add nuts. Combine all ingredients with a few
strokes. Stir lightly until barely blended. Bake in 2 greased loaf
pans for about 50 minutes or 6 ounce fruit cans filled 3/4 full to
slice prettily for more formal occasions.
