Oatmeal Nut Bread
1 c. sifted flour
1 tsp. soda
1/2 tsp. salt
1 c. quick cook oatmeal
1 egg
1/2 c. dark brown sugar
1 c. buttermilk
1 c. raisins (rinse in hot water)
1/2 c. broken walnut pieces
Sift together the dry ingredients. Add rolled oats. Beat egg
slightly, gradually beat in brown sugar. Continue beating until
thick and smooth. Add buttermilk and beat to combine. Add rest, and
mix until just moistened. Mixture will be rather thin. Bake at 350
degrees in loaf pan about 50 minutes.
